I’ve never been a big fan of coleslaw–because lesbihonest, I’ve loathed mayonnaise all my life–but after playing around in the kitchen, I’ve come up with a light mayo-free slaw that I simply can’t get enough of. This recipe is great for the summer time, and a perfect pair to my Spicy Pulled Pork.
- 3 cups purple + green cabbage, chopped
- 1 cup cucumber, chopped
- 1/3 cup purple onion, finely chopped
- 1-2 jalapenos, finely chopped
- 3 tbsp organic extra virgin olive oil
- 2 tbsp raw organic apple cider vinegar
- cracked black pepper + garlic salt to taste
Mix all ingredients together in a large mixing bowl, chill, and serve.
