Sweet Potato + Pork Sausage Hash.

Happy monday friends! I hope everyone has a great week! We’ve been in the middle of a paleo challenge with our gym, so I’ve been needing to come up with fun + exciting meals to provide some variety, all while distracting us from the foods we are trying to avoid.

I tell ya, the hardest part for me has been weaning myself off of coffee. It’s not part of the challenge, but I’m trying to limit my coffee consumption to weekends only. I seriously could drink a large cup pot all by myself. :-/ And it’s not for the caffeine, I just really like the ritual in the morning… grinding the beans, the smell of it brewing, holding a warm cup in your hands as you watch the TODAY show…. I’m not the only one right?

Anyway, I’ll keep you posted on how that goes! Now for today’s recipe, a sweet potato pork sausage hash! I had several sweet potatoes from our CSA share that needed to be used up, so I figured up a way to get them on our plate for a late breakfast this weekend! This would also be a great dinner option too! (I plan on submitting this to the challenge for extra bonus points!)

SWEET POTATO + PORK SAUSAGE HASH

  • 2 medium sweet potatoes
  • 1 tube of pork breakfast sausage
  • 2 tbs of coconut oil
  • 2 tsp of paprika
  • 2 tsp of cumin
  • 2 tsp of cayenne pepper
  • 1 tsp of cinnamon
  • salt + pepper to taste (i use a garlic pepper for every day seasoning!)

Start your sausage in a large pan over medium-high heat. Wash, peel + cut your sweet potatoes into small (1/2 in) cubes. After sausage is just fully cooked through, add sweet potatoes to pan along with 2 tbs of coconut oil and spices. Cook stirring frequently until sweet potatoes are soft and sausage is fully browned. Add extra cayenne for more kick, or cinnamon for added sweetness!

My favorite way to pair this is with a couple of fried pastured eggs + wilted spinach on the side–all cooked using the same pan!

You could eat this for breakfast, lunch or dinner! NOM. Eat up!
