Peanut Butter Cacao Protein Balls.

Happy Wednesday!

For those of you who don’t know — and if you don’t care to know, just hold your horses for a bit, and I’ll get to the recipe post soon — we have been renovating our ranch style home (that’s been in the family since 1969!) and I can finally say that the END IS IN SIGHT!

Four years ago, we purchased our home from my sweet grandmother after transitioning her to an assisted living community. At the time we weren’t really eager to move, but found ourselves checking real estate sites like Zillow on the reg, and when I brought up the idea of moving into the home that’s been in my mom’s side of the family for decades, it just made sense to us!

It’s been a lot of blood, sweat, tears, dollars + dinners on cardboard boxes over the last four years, but  we are so proud of the outcome! Our awesome construction crew who has left a mark on the majority of this house — we are only DIYers to a point…for the sake of our time + our sanity, we hired out — is finishing up the floors of our final major project, the master bedroom, as I type this out!

Over the last week I’ve caught myself reverse-walking by the bedroom to catch a peek of the wood floor progress, in a room that’s been exposed foundation concrete pretty much since day 1 of when we moved in! If you’ve lived without flooring for years, you’ll understand my excitement.

And you better believe that as soon as they are done, I am totally going to Tom Cruise all over those floors like Risky Business.

Anyway, all that to say, I can’t wait to FINALLY FULLY decorate + make this a home rather than a holding space for boxes of belongings that haven’t seen the light of day since move-in day. Which leaves me wondering…WHAT THE HECK IS IN THOSE BOXES THAT I’VE LIVED WITHOUT FOR SO LONG? I obviously haven’t missed or needed it, so it really makes me think if they are all that important anyway. #allaboutthatsimplelife

So, stay tuned for a post about the renovation reveal, and maybe if you are interested, I’ll even share some of my home/design decor process room by room? I just don’t want to bore you if that ain’t your thang, but frankly, I don’t care because this is my blog and I #dowhatIwant.

Ok, enough sass. Now to the goods of today’s post!

Right now I am going through a bit of a 21 day Reset, Sugar Detox, Whole30, “call it what you want” in order to get back into routine after this summer of way too much alcohol + sweets. Yes, I’m human, and like cupcakes + margaritas. And cupcake margaritas, too. 😉

So, even though I’m watching my grain intake at the moment, I still wanted to share this recipe with you all!

These protein balls are a great grab-n-go fuel source for a little pre/post workout bite!

Peanut Butter Cacao Protein Balls
Recipe Type: Snack
Author: Madison Luikens, NTP
Serves: 20-24 (depending on size)
Ingredients
  • 1 1/2 cups gluten free rolled oats
  • 1 jar creamy peanut butter (almond butter or other nut + seed butters work great here, too!)
  • 1 scoop vanilla protein powder
  • 1/4 cup cacao nibs
  • 2 tbs chia seeds
  • 2 tbs hemp seeds
  • 2-4 tbs almond milk
  • 1-2 tbs raw honey (optional for additional sweetness)
Instructions
  1. Add oats, cacao nibs, chia seeds + protein powder into a large bowl and combine.
  2. Stir in the peanut butter (honey would be added here, too), until evenly distributed. Mixture should be moist but still a little crumbly.
  3. Add in almond milk in 1 tbs increments as needed, and use hands to combine well.
  4. Form 1inch diameter protein balls and place on a parchment-lined baking sheet.
  5. Place baking sheet in fridge for 5 minutes to set.
  6. Store in airtight container + enjoy!
Notes
Try other fun add-ins like white chocolate + macadamia, cinnamon + raisins, maple syrup + pecans!
