Paleo Pistachio Paletas.

Where are my pistachio lovers at?! We are big pistachio enthusiasts over here. Any time we visit a little mountain town in New Mexico, we HAVE to stop and pick up a bag of green chile pistachios. #YUM

As we are slowly nearing the end of summer (West Texas probably has a good extra month of 90+ degree heat left…oof!), we are saying our goodbyes to all the yummy summer eats that are going to vanish until next May. During my time in Nashville for school, I lived within walking distance from this adorable paleta shop, and ever since moving back home, I’d get a hankering for a good paleta. We have a couple of places here around town…but I’ll be honest, they are a little sketch. :-/

I’d been wanting to whip up some paletas on my own for some time now, so as a little end of summer hoorah, I bring you: PALEO PISTACHIO PALETAS! #saythatthreetimesfast

Yup. Any chance I can get to sneak in some extra healthy goodies (especially good fats), I do it.

These paletas are creamy + mildly sweet, which is great for anyone dealing with that pesky sweet tooth that often leads to blood sugar issues.

paletas_008PALEO PISTACHIO PALETAS

  • 1 avocado
  • 1 14oz can of organic full fat coconut milk
  • 1/2 cup of raw organic pistachios, roughly chopped
  • 1/2 cup water
  • 2 tbs of organic honey
  • 1 tsp of pure vanilla extract
  • paleta mold + popsicle sticks
  • finely shredded coconut +finely chopped pistachios for garnish (optional)

In a blender or food processor, add all of the ingredients and blend for 2-3 minutes until everything is even. Pour into molds, garnish ends with extras, place popsicle sticks, and let set in freezer overnight. Run warm water over sides of molds to remove. Makes 10 paletas.

NOTE: Soak your popsicle sticks in water for at least an hour before making paletas. This will help the mixture freeze + adhere to the stick, ensuring that no paletas are stickless when you try to wiggle them free!
