This dish is the perfect poolside companion this summer, because it is full of so many beneficial vitamins + minerals that will keep you on your beach babe glowy skin game all summer long!
DRAGON FRUIT SUMMER SALAD
- 1 dragon fruit, flesh removed + cubed
- 1 cup each of chopped pineapple, mango, strawberries + kiwi
HONEY LIME DRESSING
- juice of 1 lime
- 1 tbs of lime zest
- 1-2 tbs of honey (depending on preferred sweetness)
- fresh mint, minced
Combine chopped fruit in a large bowl. Whisk ingredients for honey lime dressing in a small bowl or easily shake it up in a small mason jar. Drizzle on chopped fruit. Toss + serve immediately.
MAKE IT FUN!
Add a dollop of whipped coconut cream, sprinkle cinnamon, chia seeds, hemp seeds or shredded coconut on top!
