Happy Day! Even though it feels like summer is quickly approaching (I can’t believe April is NEXT week!) I still want to share this yummy grain-, gluten-, dairy-free soup recipe that might come in handy when you are trying to fight off those pesky seasonal allergies or kick the last of that winter cold.
Today’s recipe is a spin on an old classic, AND it’s hubby approved, don’tcha know.
CHICKEN ZOODLE SOUP
- 8-10 cups of seasoned homemade chicken stock (recipe coming soon)
- 2-3 zucchini, halved, then spiralized
- 2 cups of shredded cooked chicken, chopped into bit-sized pieces
- 3-4 carrots, sliced
- salt + pepper to taste
In a big soup pot, bring broth and all the ingredients to a boil, then let simmer for about 20 minutes. Enjoy!
NOTE: The key with any soup is the broth–homemade is best for most flavor + nutrition!–so you will need to monitor and season it to your taste so that it will be full of flavor and won’t be bland.
Play with it and add other fun veggies or seasonings to make it your own! 🙂
